1 pieceTurkey Breast or Thigh (bone-in
2 eachLarge Carrots
2 eachOnions, halved
1/4 cupDried Shiitake Mushrooms
2 cupsFresh Shiitake Mushrooms, stems removed, sliced
2 cupsKale or Cabbage
2 clovesGarlic, thinly sliced
1 tspChili Flakes
2 tbspOlive Oil
To TasteSea Salt and Freshly Ground Black Pepper


  1. Add turkey to a pot, cover with cold water (about 2 Litres). Add carrots, onion and dried mushroom. Bring to a boil, then reduce heat and simmer uncovered for about 3 hours. Add more water as you need to keep turkey covered.
  2. Remove the turkey, let cool, and then shred into pieces. Strain remaining stock and reserve.
  3. In a large pot over medium heat, add olive oil, garlic and chili flakes. Saute for about 1 minute. Add mushrooms and saute another 2 minutes.
  4. Add kale about 1 cup of shredded turkey meat and about 6 cups of turkey stock. Bring up to a boil and remove from the heat. Add lemon juice and season to taste.


  • Turkey is high in protein and lower in saturated fat than red meat. Before and after treatment or surgery, your protein needs will be higher, this is because you need extra protein to rebuild tissues and heal. One serving of turkey (4 oz or 75 grams) has 21 grams of protein. Turkey also contains all of the B vitamins, which are used to convert the food you eat into energy.
  • Water isn't the only fluid option! Drink juice, milk and smoothies or sip on soup, they all count as fluids that hydrate.
