Ingredients

6 to 8Eggs
1/2 cupPlain Yogurt
1 cupKale, roughly chopped
1 smallRed Onion, thinly sliced
1/4 cupWalnuts
1/2 cupGruyere Cheese, grated (use your favorite)
1 tbspOlive Oil
1/2 tspSea Salt and Ground Black Pepper

Directions

  1. Preheat the oven to 350 F.
  2. Cut a piece of parchment paper larger than your skillet or sauté pan. Run under water, squeeze it dry, and then fit into your pan.
  3. Place over medium high heat. Add olive oil. Add one slice of onion.
  4. When it begins to sizzle, add remaining onions and kale. Cook for about 2 minutes.
  5. Whisk eggs with yogurt, season with salt and pepper and pour into pan.
  6. Top with walnuts and cheese.
  7. Bake for about 25 minutes or until middle is set and golden brown on top.
  8. Once cool, remove from pan using the edges of parchment. Slice and serve.

Cooking Tips

  • Cook in parchment paper: Cooking in parchment paper is very easy and reduces the amount of dirty dishes you need to clean afterwards.

o   To cook in parchment paper, fold a large piece in half. Place your seasoned ingredients in the middle of one of the halves. Fold over the top half of parchment and fold and crimp the edges to create a seal. Then simply bake in the oven at 350 – 375 degrees F for desired cooking time.

  •  Cooking on parchment paper: You can even line your frying pan or baking dishes with a piece of parchment and cook directly on top. It acts as a non-stick barrier so you won't need to cook with much oil and it makes clean-up easier.
