Ingredients

1 eachZucchini, peeled into ribbons or thinly sliced
1 eachSmall Red Onion, thinly sliced
1 tspHoney
2 tbspCider or White Wine Vinegar (any vinegar will work)
1/4 cupFresh Mint, roughly chopped
4Whole Wheat Pitas
1/2Lemon, zest and juice
1 tbspOlive Oil

Directions

  1. Preheat the oven to 450 degrees F
  2. Mix the ricotta with lemon zest and set to the side.
  3. Use a vegetable peeler to peel strips of the zucchini into ribbons. Toss the onion and zucchini in honey, vinegar, salt and pepper. Let it sit for a couple minutes.
  4. Top the pitas with ricotta cheese, gently spread evenly across.
  5. Add the zucchini and onion over top.
  6. Place pitas on a baking sheet and into the oven for about 7 minutes, or until lightly golden brown on top.
  7. Finish flatbreads with fresh mint and a light squeeze of lemon juice.

·         Aim to make half of your plate non-starchy vegetables, a quarter plate protein and the other quarter quality carbohydrates from whole grains or legumes.
