1 eachZucchini, peeled into ribbons or thinly sliced
1 eachSmall Red Onion, thinly sliced
1 tspHoney
2 tbspCider or White Wine Vinegar (any vinegar will work)
1/4 cupFresh Mint, roughly chopped
4Whole Wheat Pitas
1/2Lemon, zest and juice
1 tbspOlive Oil


  1. Preheat the oven to 450 degrees F
  2. Mix the ricotta with lemon zest and set to the side.
  3. Use a vegetable peeler to peel strips of the zucchini into ribbons. Toss the onion and zucchini in honey, vinegar, salt and pepper. Let it sit for a couple minutes.
  4. Top the pitas with ricotta cheese, gently spread evenly across.
  5. Add the zucchini and onion over top.
  6. Place pitas on a baking sheet and into the oven for about 7 minutes, or until lightly golden brown on top.
  7. Finish flatbreads with fresh mint and a light squeeze of lemon juice.


·         Lymphedema is swelling, often in only one arm or leg, that occurs when fluid cannot circulate properly and builds up in the tissues instead of being flushed out of the body. It is a common side effect of cancer or its treatment.


·         Research shows that there is no one specific food or diet to help reduce swelling from lymphedema.


·         Along with exercising regularly, self massage and compression garments, it is important to have a balanced diet and make healthy food choices to maintain the body’s overall fluid balance and weight.


·         Aim to make half of your plate non-starchy vegetables, a quarter plate protein and the other quarter quality carbohydrates from whole grains or legumes.
