Ingredients

Coffee Meringue
3Egg Whites
1/4 cupOrganic Cane Sugar
3 tbspBoiling Water
4 tspInstant Coffee
Baked Apples
3Apples (use your favorite), core removed and roughly chopped
1/2 tsp eachGround Cinnamon, Ground Ginger
2 tbspMaple Syrup
1 tspLemon Juice

Directions

  1. ​Preheat the oven to 250 degrees F.
  2. Dissolve the instant coffee in the boiling water and then immediately to the egg white and sugar in a larger mixing bowl. Whisk until they form fluffy and stiff peaks.
  3. Spread onto a baking sheet lined with parchment paper, try to form it into a circle about 2 inches high.
  4. Bake for about 90 minutes.
  5. Combine the apples, spices, maple syrup and lemon juice in a baking dish. Cover and bake for 90 minutes.
  6. Meringue should be crunchy and slightly soft in the middle. Top with baked apples and any other toppings you like.
