Coffee Meringue

Egg Whites
1/4 cup
Organic Cane Sugar
3 tbsp
Boiling Water
4 tsp
Instant Coffee
Baked Apples

Apples (use your favorite), core removed and roughly chopped
1/2 tsp each
Ground Cinnamon, Ground Ginger
2 tbsp
Maple Syrup
1 tsp
Lemon Juice
Directions
Cooking Directions
Preheat the oven to 250 degrees F.
Dissolve the instant coffee in the boiling water and then immediately to the egg white and sugar in a larger mixing bowl. Whisk until they form fluffy and stiff peaks.
Spread onto a baking sheet lined with parchment paper, try to form it into a circle about 2 inches high.
Bake for about 90 minutes.
Combine the apples, spices, maple syrup and lemon juice in a baking dish. Cover and bake for 90 minutes.
Meringue should be crunchy and slightly soft in the middle. Top with baked apples and any other toppings you like.

A European study of nearly half a million people found that people who drank more than half a cup of coffee or tea each day had a 34% lower risk of developing glioma brain tumours compared to people who drank less than half a cup. Keep in mind, it’s possible to get too much of a good thing. Coffee is rich in antioxidants such as caffeic acid and cafestol. In the lab, caffeic acid has been shown to lower inflammation and cause cancer cells to self-destruct. In cell and animal studies, cafestol was observed to prevent cancer-causing chemicals from causing damage to healthy cells.
