Ingredients

2 clovesGarlic
1/2 cupFeta Cheese
1/4 cupMayonnaise (recipe from scratch below)
1 tbspDill, roughly chopped
To tasteFreshly Ground Black Pepper
Eggless Mayonnaise (Aioli)
1/3 cupWhole Milk, very cold
1 tspLemon Juice
1 tspGrainy Dijon Mustard>
4 clovesGarlic, peeled
3/4 cupVegetable oil (or Olive Oil, Walnut Oil…)
To tasteBlack Pepper and Sea Salt, freshly ground

Directions

  1. Add milk, lemon juice, garlic and mustard to a food processor. Pulse to combine well.
  2. Very slowly, drizzle in your oil while the food processor is running. Continue to add oil slowly until the mixture resembles the consistency of mayonnaise.
  3. Season with salt and pepper, and refrigerate for up to one week.
  4. Add ¼ cup of the fresh mayonnaise, garlic and feta to a food processor and blend well. Season to your taste.
You can then spread this on toast or use as a dip.
