Ingredients

6Eggs
1/2 cupFresh or bottled salsa
1 cupMushrooms, sliced
2Green Onions, thinly sliced
1/2 cupFresh Herbs of your choice (Parsley, Mint, etc.)
To tasteSea Salt and Black Pepper

Directions

  1. ​Preheat the Oven to 400 degrees F.
  2. Cut a large piece of parchment paper into squares, and wet them in cold water. Squeeze out as much water as possible and then push the squares into the muffin tins.
  3. Place a spoonful of mushrooms, green onions and salsa in each muffin tin.
  4. Crack an egg into each muffin tin.
  5. Place into oven for 10-15 minutes, until the eggs are done the way you like.
  6. Serve in the parchment.

Nutrition

  • Eggs contain iron and vitamin B12, nutrients that are essential for red blood cell formation. They are also one of the few food sources of vitamin D. Although our bodies produce vitamin D when we spend time in the sun, in Canada and other countries in the northern latitudes we may need additional vitamin D for bone health and to fight cancer. There is some debate over how much vitamin D we need in a day, but we shouldn’t have more than 4000 international units (IU) per day. This is important to know if you are taking vitamin D supplements.
  • Mushrooms contain all of the essential amino acids and are a good source of the mineral selenium. Studies have shown that selenium may help lower prostate cancer risk. A long-term study found that men with the highest selenium levels were 48 percent less likely to develop advanced prostate cancer than men with the lowest levels. Some smaller studies have found a link between eating foods rich in selenium and lower risk of colon and stomach cancer.
  • Parsley is rich in antioxidants and vitamins A and C. In animal studies, parsley has been shown to prevent tumors from forming.
