Ingredients

2 cupsRhubarb, small dice
1 cupFrozen or Fresh Pitted Cherries, roughly chopped
1/2 cupMaple Syrup
1 cupRed Fife or Spelt Flour
3Eggs
1 cupMilk
1/2 cupGreek Yogurt
1 tspPure Vanilla Extract
1 tbspOrange Zest
2 tbspOrange Juice

Directions

  1. ​Preheat the oven to 350 degrees F.
  2. In a small sauce pot add your rhubarb, cherries, half of your maple syrup and the orange juice. Combine well and bring to a simmer over medium heat. Simmer for about 10 minutes until rhubarb has softened slightly. Set aside to cool.
  3. In a large mixing bowl, whisk your eggs, milk, yogurt, vanilla, remaining maple syrup, and orange zest together. Slowly add in your flour and mix well.
  4. In a medium baking dish, add your fruit mixture and pour your batter over top, stir to combine.
  5. Bake in the oven for about 35 to 40 minutes, until golden brown.
  6. Serve warm or cold.
