Vitamin A is an antioxidant that is important for maintaining healthy eyes and skin. One cup of cooked kale provides more than 3 times the amount of vitamin A you need in a day.
Kale is especially high in vitamin K, with 1 cup of cooked kale providing 10 times the amount you need in a day. Vitamin K helps blood to clot properly and is needed for healthy bones.
The fibre in kale helps to lower your cholesterol by binding with bile acids in your gut. Steaming or blanching kale helps the fibre bind even more effectively with these bile acids, giving you even more heart health and cholesterol-lowering benefits!
