Ingredients

1Small Green Cabbage
1/2 lb (about 227g)Ground Chicken (optional)
1Small Onion, finely chopped
1Large Carrot, grated
2 cupsMushrooms, sliced
1 cloveGarlic, minced
1/4 cupParsley, finely chopped
1 1/2 cupsCooked Grain (Rice or Barley or Farro etc.)
2 cupsStock or Water or Tomato Puree
2 tbspOlive Oil
To TasteSea Salt Salt and Black Pepper

Directions

  1. Preheat oven to 350 degrees F. Remove core from cabbage. Place cabbage into large pot of boiling salted water. Cover and cook for 3 minutes, or until softened enough to pull off individual leaves. Cut away thick center stem from each leaf.
  2. Sauté chopped onion in oil until tender, add garlic. Add ground chicken and cook for 2 minutes. Then add, mushrooms and carrots. Combine with cook rice and mix all until combined. Season with salt and pepper.
  3. Place approximately ¼ cup of filling onto the middle of the leaf. Flip right side into the middle, followed by the left. Flip the bottom and roll.
  4. Pour stock or sauce into a baking dish, place cabbage rolls into dish. Place extra cabbage leaves over rolls and bake for one hour.
