Cooking Directions
Add the oats to a food processor and pulse until broken down into a crumbly flour.
Add remaining ingredients and pulse until everything is broken down and comes together. You should be able to scoop out a piece at it should hold together. If it’s too dry, add more peanut butter. If it’s too wet and sticky, add more oats.
For a little more sweetness add some maple syrup.
Scoop out a couple tablespoons at a time, roll into a ball and place on a baking sheet with parchment. Gently press each cookie ball down with a fork until it resembles a flat, round cookie. Top with extra nuts or seeds or chocolate chips as desired.
