Ingredients

2 tbspCocoa Powder
1 cupLarge Flake Oats
1 cupPeanut Butter
1/2 cupDates
1/4 tspSea Salt
3 tbspMaple Syrup (optional)

Directions

  1. Add the oats to a food processor and pulse until broken down into a crumbly flour.
  2. Add remaining ingredients and pulse until everything is broken down and comes together. You should be able to scoop out a piece at it should hold together. If it’s too dry, add more peanut butter. If it’s too wet and sticky, add more oats.
  3. For a little more sweetness add some maple syrup.
  4. Scoop out a couple tablespoons at a time, roll into a ball and place on a baking sheet with parchment. Gently press each cookie ball down with a fork until it resembles a flat, round cookie. Top with extra nuts or seeds or chocolate chips as desired.
