Medium Sweet Potatoes
2 cups
Coconut Water
To Taste
Sea Salt and Black Pepper
2 tbsp
Seeds (Chia, Sunflower or Hemp etc.)

Cooking Directions
Preheat the oven to 375 degrees F.
Prick the sweet potatoes with a fork a few times. Place on a baking sheet and bake for about 45 minutes or until very soft to the touch.
Allow sweet potatoes to cool until easy enough to handle. Peel off the skins and place the sweet potato flesh inside a blender with coconut water. Blend until very smooth.
Pour mixture into a pot and warm to serve. Season to taste. Top with seeds for crunch.
