Ingredients

2 cupsPumpkin or Squash, graed (or 1 cup pureed)
1 cupVegetable or Chicken Stock
1 cupWhole or Skim Milk or Milk Alternative
2 clovesGarlic, minced
1 tbspCurry Powder
1 1/2 tbspAll Purpose Flour
3/4 cupSharp or Smoked Cheddar, grated
454gWhole Wheat or Spelt Macaroni
1 1/2 tbspOlive Oil
½ tspSea Salt and Freshly Ground Black Pepper
Topping
1/4 cupParmesan Cheese
1/4 cupBreadcrumbs
2 tbspPumpkin Seeds
2 tspDried Thyme

Directions

  1. Cook your pasta according to the box instructions, drain and set aside.
  2. In a medium sauce pot over medium heat, add 1 ½ tbsp of olive oil and stir in the flour until well combine together.
  3. Add the curry powder and garlic and continue to stir and good until it gets slightly darker. About 3 minutes.
  4. Add the stock, milk and pumpkin. Stir well and bring to a simmer. Cook for about 15 minutes. Stir in the cheese.
  5. If you want the sauce creamy, blend until smooth. Add to your cooked pasta.
  6. Place in a baking dish and top with the bread crumbs. Place under the broiler in your oven for a few minutes until golden brown.
