Ingredients

2 tspMatcha
2 cupsCashews (or any nuts/seeds)
1/2 cupUnsweetened, Shredded Coconut
1 tbspCoconut Oil
1/2 cupDried Cranberries
1/2 cupDried Dates
1/4 cupCacao Nibs or Dark Chocolate Chips (optional)

Directions

  1. In a food processor, add the cashews and run on high until broken down into fine crumbs. Scrape down the sides, and continue to run on high until a paste forms.
  2. Add your remaining ingredients and pulse until it comes together into an even mixture.
  3. Roll about two tablespoons at a time into small balls, or flatten into patties. Roll in shredded coconut or cacao powder (optional.)
  4. These will last in the fridge for up to one week or freeze for up to one month.

​Culinary Tips

  • Matcha Powder are the crushed green tea leaves, so it does contain caffeine. You can leave the matcha out if you are looking to avoid caffeine.
  •  Blend any nuts or seeds in a food processor until it becomes soft and the natural oils come out. This is a super easy way to make your own nut butter!​
