Matcha
2 cups
Cashews (or any nuts/seeds)
1/2 cup
Unsweetened, Shredded Coconut
1 tbsp
Coconut Oil
1/2 cup
Dried Cranberries
1/2 cup
Dried Dates
1/4 cup
Cacao Nibs or Dark Chocolate Chips (optional)
Directions
Cooking Directions
In a food processor, add the cashews and run on high until broken down into fine crumbs. Scrape down the sides, and continue to run on high until a paste forms.
Add your remaining ingredients and pulse until it comes together into an even mixture.
Roll about two tablespoons at a time into small balls, or flatten into patties. Roll in shredded coconut or cacao powder (optional.)
These will last in the fridge for up to one week or freeze for up to one month.

Matcha Powder are the crushed green tea leaves, so it does contain caffeine. You can leave the matcha out if you are looking to avoid caffeine.
