Dry Bulgur

Pomegranate, seeds removed

Oranges
1/4 cup
Fresh Mint, finely chopped
1/2
Radicchio Head, roughly chopped
1/2 cup
Goat Cheese, crumbled
Dressing
1 tbsp
Balsamic Vinegar
1 tbsp
Pomegranate Juice
2 tbsp
Olive Oil
1/2 tsp
Sea Salt and Freshly Ground Black Pepper
Directions
Cooking Directions
In a large bowl, cove bulgur with 1 ¾ cups of boiling water. Cover with plastic wrap and set aside for 10 minutes until all the water was been absorbed.
Dress bulgur with half the dressing, mix well. Pour out onto serve dish.
Top with pomegranate seeds, orange slice, radicchio and fresh mint. And crumble goat cheese over top.
Drizzle over remaining dressing and serve.
