Ingredients

1 cupPumpkin Puree (not pumpkin pie mix)
1 1/2 cupsOats
1/2 cupPumpkin Seeds (if nuts & seeds bother you, substitute for an extra 1/2 cup of oats instead)
2Eggs
1/2 cupMaple Syrup
1/4 cupGrape Seed Oil (or any vegetable oil)
1 tbspBaking Powder
1 tspCinnamon
1/2 tsp eachGround Ginger and Ground Nutmeg
1/4 tspSea Salt

Directions

  1. Preheat to 375 degrees F.
  2. Pulse the oats and pumpkin seeds in a food processor until very fine like flour.
  3. Add to a bowl with baking powder, salt, cinnamon, ginger and nutmeg.
  4. In a separate bowl, whisk eggs. Add pumpkin puree, maple syrup and oil.
  5. Slowly mix the dry ingredients into the wet, just until the batter is combined.
  6. Pour into muffin tins lined with muffin papers, or pour into loaf pan no higher than 2 inches.
  7. Bake 25 to 30 minutes or until knife inserted into the center comes out clean.

Nutrition

  • A high fibre diet may make diarrhea worse for some people.
  • Fibre is part of the plant that your body cannot breakdown. There are 2 kinds: soluble and insoluble. Soluble fibre soaks up water and slows down movement while insoluble fibre does not take in water and speeds up movement. 
  • Aim to eat more soluble fibre such as oats, barley and bananas. Also, remove the skins, seeds and membranes from vegetables and fruit.
  • Talk to your doctor about the possibility of taking medications to help with diarrhea. 
  • Be sure to include more foods that are suggested in the "Eating Hints For People with Diarrhea" handout from Princess Margaret and/or speak to a Registered Dietitian
