Turkey Matzo Ball Soup

Ingredients

2Turkey Thighs (bone-in, skinless)
2Large Onion, halved
4Carrots, halved
1Garlic Head
1Fennel Head, quartered
8Water
1 cupParsley
1 tspSea Salt & Ground Black Pepper
Turkey Matzo Balls
3Eggs
1 cupMatzo Crumbs or use Bread Crumbs
2 tbspFresh Dill or Fennel Tops, finely chopped
1 cupCooked Turkey Meat
1/2 tspSea Salt & Ground Black Pepper

Directions

  1. Add all the broth ingredients to a large stock pot over high heat. Cover with water, bring to a boil and reduce the heat to medium low and simmer for 1 hour.
  2. Remove the turkey thighs to cool and let the broth continue to simmer.
  3. Shred the meat off the bone, reserve 1 cup for the matzo balls and refrigerate the rest.
  4. Either by hand or with a food processor, roughly chop up 1 cup of the cooked turkey. Add remaining ingredients and combine well.
  5. Take the mixture and roll into large meatballs and gently add to the simmering broth. Allow to simmer for another 20 minutes.
  6. Serve up some of the broth with a turkey matzo ball and some extra shredded turkey.
