Whole Grain Bread, toasted & cubed
1 cup
Canned Cannellini or White Kidney Beans, drained and rinsed
1/2 cup
Onion, sliced
1/2 cup
Green Peas
1/2 cup
Cucumber, diced
1/2 cup
Tomatoes, diced
1/2
Avocado, diced
1/2 cup
Any Herbs (parsley or cilantro or basil or mint etc.)
¼ cup
Parmesan Cheese (optional)
Dressing
2 tbsp
Lemon Juice or Vinegar
3 tbsp
Olive Oil
1/2 tsp
Sea Salt & Black Pepper
Directions
Cooking Directions
In your largest bowl, add oil, vinegar/lemon juice, salt and pepper, mix well.
Start adding ingredients with your onion first, add your beans and bread next. Then all remaining ingredients and toss well. Enjoy right away or set in the fridge to let the flavours intensify, it tastes bet the day after
The key is to use up and veg that you have and/or enjoy!
